Hi there! I usually smell or listen for crackling noise.

Smell is a pretty good strategy, especially with meat. It isn't easy to get it exactly right, I've been through a lot of trial and error, and fed my garbage disposal more than one error. <smile>

Hmmm, Are you using a deep fryer or frying it on the stove or electric skillet? In some cases, with skillet frying, you can press on it with the spatula and can tell by the sound it makes. If it really sizzles up when you press down on it, then it's likely that it's not quite done. If you still need tips and tricks on it, give me a bit more info and I'll tell ya what I know.

I know I still need some tips and tricks when I'm frying things, lmfao. I either, burn the bottoms out of our frying pans or I completely incinerate the food I intended just to fry. Smell isn't a brilliant indicater for me either, lmfao.

Sounds like you cook it at too high a temperature. In most cases, Turning the stove to medium is plenty hot enough to fry anything, and the oil won't splatter and pop so baddly. You might need to use just a bit more oil too, but I can't be certain on that one.
